FDSN Seminar Series, Nutrition and Immune Resilience: A Clinical Perspective

Join the Department of Food Science and Nutrition for this seminar series event featuring guest speaker Chelsea Preiss, a licensed dietitian nutritionist and clinical research associate with the Center for Nutrition Research at the Illinois Institute of Technology. The virtual event will be on November 4 at 1 p.m.

Nutrition is the first line of defense against a host of chronic conditions such as diabetes, hypertension, and metabolic syndrome. These conditions have shown to impair immune function by disrupting immunometabolic pathways. This presentation will cover nutritional strategies for building immune resilience and highlight the role of westernized diets on our immune system. Special focus will be paid to the microbiome, inflammation, insulin response, nutrient deficiencies, and immune-metabolic crosstalk. Included will be the challenges and opportunities for translating modern research into clinical practice.
