Potato Research Study Looking for Female Volunteers

The Institute for Food Safety and Health Clinical Nutrition Research Center is conducting a study to find the health benefits of potato polyphenols. Eligible participants should be healthy individuals, pre-menopause females who are 20-45 years of age, and non-smokers.

This study will involve:

> Two study visits
> Each study visit will take about seven hours at the Nutrition Center located on the third floor of the IIT Tower
> Blood samples will be collected at each period
> Dinner will be provided the day before each study visit
> A test treatment and breakfast will be provided during the study visit
> Compensation is up to $200 for completing the study
