Silver in Antimicrobial Plastic Packaging Leaches Into Foods
January 23, 2025Timothy Duncan, a research scientist at the U.S. Food and Drug Administration (FDA), along with colleagues from the Institute for Food Safety and Health (IFSH), demonstrated through research that silver can leach from nanoparticle-containing plastic packaging into the food it holds. While antimicrobial packaging is recognized for its ability to extend food shelf life, prevent illnesses, and reduce food waste, this new research highlights a reason for caution when using such materials, and could play a role in future policy decisions. -
Illinois Tech’s Institute for Food Safety and Health Renews Five-Year, $3.9 Million Cooperative Agreement with FDA
November 12, 2024In September 2024 the United States Food and Drug Administration awarded Illinois Tech’s Institute for Food Safety and Health (IFSH) $3.9 million for the first of a five-year cooperative agreement renewal continuing to support its history of success working toward safer and more wholesome food. -
Dr. Jason Wan Honored as Fellow of International Academy of Food Science and Technology
September 26, 2024Dr. Jason Wan has been inducted as a fellow of the International Academy of Food Science and Technology (IAFoST) for his significant contributions to the field of food science. Dr. Wan serves as the associate director at the Institute for Food Safety and Health (IFSH), director at the Food Safety Preventive Controls Alliance (FSPCA), and professor of food science at Illinois Tech. -
Igniting Young Minds: Camp Flight Explores Food Safety at IFSH
August 1, 2024On Friday, July 19, the Illinois Tech Institute for Food Safety and Health (IFSH) welcomed the enthusiastic young minds of Camp Flight from LOTUS (Lifting Ourselves Through Us). This summer program, located in Chicago’s Bronzeville neighborhood, aims to ignite curiosity in children aged 8-13 through engaging activities and industry tours. During their visit, the children enjoyed a half-day of exciting science activities and a comprehensive tour of our food safety research facilities. -
Brian Schaneberg Presents at AOAC International Midwest Section Annual Meeting
June 13, 2024Dr. Brian Schaneberg, the executive director of the Institute for Food Safety and Health (IFSH) at Illinois Tech, addressed the Association of Official Analytical Chemists (AOAC) International at its Midwest meeting in Chicago, held from June 3–5. Founded in 1884, AOAC International is one of the most highly regarded international associations of analytical science professionals. -
Dr. Brian Schaneberg Partners with Reckitt for ‘World Food Safety Day’ Seminar
June 6, 2024Dr. Brian Schaneberg, the executive director of the Institute for Food Safety and Health (IFSH) at Illinois Tech, is participating in a World Food Safety Day seminar this week, focusing on dedicated food safety processes. The seminar is organized by IFSH member Reckitt, a multinational firm operating in 68 countries across six continents. -
Senior Government Officials Visit Institute for Food Safety and Health (IFSH)
May 23, 2024Jim Jones, deputy commissioner for human foods at the U.S. Food and Drug Administration, and Mike Cabonargi, health and human services regional director, recently visited the Institute for Food Safety and Health (IFSH) in Bedford Park on May 9, 2024. Jones is leading and setting priorities for the proposed unified Human Foods Program (HFP), which will oversee food safety, chemical safety, innovative food products, and nutrition to improve public health. -
Jason Wan Elected as Fellow of International Academy of Food Science and Technology
March 28, 2024Jason Wan, professor of Food Science and Nutrition and associate director of the Institute for Food Safety and Health (IFSH), has been elected by the International Union of Food Science and Technology (IUFoST) to the 14th class of the International Academy of Food Science and Technology (IAFoST). Wan and the other 24 new fellows will be introduced by the Academy Executive Council, led by Dr. Charles Aworh, academy president, at the 22nd World Congress of Food Science and Technology to be held in Rimini, Italy, on September 8–12, 2024. -
Washington Red Raspberry Commission Announces Winners of Illinois Tech Food Product Innovation Student Competition
February 27, 2024The Washington Red Raspberry Commission and Illinois Tech Department of Food Science and Nutrition announced winning concepts from the new Food Product Innovation Student Competition, aimed at developing new product concepts for use by the Washington red raspberry industry. Seventeen master’s-level program students participated in the competition, forming five teams and five corresponding product concepts. Student groups presented their concepts to a panel of judges on Feb. 7 at Charlie Baggs Culinary Innovations studio in Chicago.
